

Bara Brith
Ingredients
400g mixed fruit (e.g. sultanas, raisins, currants)
300ml strongly brewed tea
250g self raising flour
1tsp mixed spice
100g dark brown muscovado sugar
1 free range egg (beaten)

Method
Put the mixed fruit into a bowl. Pour in the strongly brewed tea and mix in the sugar. Stir well to dissolve. Leave overnight or at least 6 hours.
Once soaked, sift in the flour and the mixed spice. Do not remove the tea mixture. Stir in the beaten egg and blend well.
Pre-heat the oven to 180 degrees/gas mark 4. Line a 900g loaf tin with parchment paper. Pour in the mixture evenly.
Bake for approximately 1 hour so that the cake is risen and cooked through. Leave to cool on a rack and leave for 2 days before eating for the best flavour.
Serve sliced with butter.
For a glazed finish, warm some honey and put over the top whilst the loaf is still warm.
Your loaf will keep for 7 days.
